BREAKFAST EGG SANDWICHES
Whether you are on the road traveling or staying at a campsite or hotel, breakfast is one of the most important meals of the day. These breakfast egg sandwiches will give you the energy you need to get through your busy day! It is so much more fun to go site seeing or going on local adventures with a full stomach!
There are a couple of different ways to prepare and make these go-to breakfast egg sandwiches. First you can always prepare them at home before you go. Using a mason jar lid and some cooking spray to enable the egg to fit perfectly on the English muffin, is an easy way to pack it neatly in foil for traveling and reheating.
Spray the mason jar lid with cooking spray and place it on a warm skillet. Crack the egg into the mason jar lid. Wait for the underside to completely cook then flip the egg with the lid and cook the other side. Toast your English muffin and top with egg, salt and pepper to taste! Wrap in foil for later.
If you choose to do this while camping, you can prepare ahead of time and then just reheat them near the fire, once you are ready for them. You can also make them over the fire with a mason jar lid and a cast iron skillet. Staying in a hotel? Try bringing a small hotplate with you and using it instead of a skillet.
Finally, once you have prepared them and wrapped them in foil it is time to store them for later. Be sure to keep them away from any melting ice, if you are storing them in a cooler. Best to keep them on top. They will stay good for several hours without being kept cool.
However you are traveling, these are morning time winners for sure!
