Campfire Spicy Tomato Soup

OVERVIEW

Will you be camping in the cold and need a fresh take on an old favorite to warm you up? Why not try this fantastic campfire spicy tomato soup recipe. Camping in the cold does have it’s advantages! So many warm foods to make, eat and enjoy in fall, winter and early spring. Sometimes, you find yourself camping in the summer and the area you are in tends to get chilly at night, perfect for a cup or bowl of soup!

EASY RECIPE

This recipe is easy enough, even for those who are not avid chefs in the kitchen.

You are able to use fresh ingredients or canned, whichever you prefer or is necessary for your trip. You will need a Cast Iron Dutch Oven such as this one: https://www.walmart.com/browse/home/cast-iron-dutch-ovens/4044_623679_8140341_9804513.

Also, you will need fire from a firepit or propane fire source.

CAST IRON DUTCH OVEN

First, in the Cast Iron Dutch Oven, pour a couple of tablespoons of olive oil. Then add any veggies or precooked meat you may want in your spicy tomato soup (below are several options to choose from). Cook until your veggies are soft and meat is warm.

BRING TO A BOIL

Next, add and start bringing to a boil either leftover chicken stock you may have or a 32 ounce box of chicken stock, to the olive oil and veggie mixture. Once it has come to a boil, slowly add in 16 ounce pizza paste and 16 ounces of marinara sauce and stir, (you may use your own puree of stewed tomatoes here as well).

After you have added the tomato mixture, add in about 15 ounces of black beans, cannellini beans or pinto beans and a cup of pasta.

To finish off the mixture, add in your spices such as garlic salt, crushed red pepper, salt and pepper.

LET IT SIMMER!

Finally, let the soup simmer for about 20-25 minutes over a low fire in the Cast Iron Dutch Oven. You will have soup for dinner and possibly even lunch in your thermos for your hike the next day!

32 ounces of Chicken Stock
